Belgian Waffles

    This recipe is my go to waffle recipe because all waffles should be made from scratch!

    The special touch of Belgian pearl sugar will leave you wanting to eat these instantly as they come off the waffle iron. I don’t think we can make them fast enough to keep up with the family eating them.

    The pearl sugar is amazing because it carmelizes when baking to create crunchy pockets of sweetness. My favorite brand to use is Lar’s Own Belgium Pearl Sugar. I buy it off of Amazon and it is so nice because you can get two 8 oz packages which means double the amount of times you can make these waffles.

    If you are wanting to add a little extra to make these waffles a real fan favorite, we love to add strawberries and cream to them.

    It is super simple! All you need to do it cut up a package of strawberries and sprinkle some sugar over them to coat. Then you whip up some heavy cream with an electric mixer adding in a small amount of sugar until it reaches your desired sweetness just after the mixer starts to thicken. You can also use canned whipped cream, but I love the taste of whipping up my own.

    1. Preheat oven to 200F degrees. Preheat your waffle iron. In a mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt for 20 seconds. Make a well in the center of the mixture and set aside.
    2. In a separate mixing bowl, combine buttermilk, milk, vegetable oil, vanilla extract, and egg yokes.
    3. In a separate bowl, whip egg whites until soft peaks begin to form. Add sugar and whip until stiff glossy peaks form.
    4. While whisking, pour buttermilk mixture in the well of the flour mixture and mix until combined (batter will be lumpy). Fold in egg white mixture.
    5. Scoop out 3/4 to 1 cup of batter and add 2 Tbsp of pearl sugar. Gently coat the pearl sugar then pour the batter into the waffle iron. Cook batter in waffle iron according to manufactures directions (I tend to give it another couple minutes so my waffles are crunchy).
    6. Once each waffle is done you can transfer them to the oven and allow them to rest until crisp.
    7. serve with strawberries and sweetened whipped cream, fresh berries, berry syrups. For churro waffles brush the top of the waffle with melted butter then pour generous amount of cinnamon sugar into a pie dish to dunk the waffle in.
