Quick Rosemary Chicken and Mashed Potatoes

    This has always seemed to be a classic at my house. I always love a quick and delicious dinner, and this recipe is just that.

    The chicken is incredibly simple all because of this amazing called Tone’s Rosemary Garlic seasoning. We usually order it from Amazon, but go through it so quickly. It has incredible flavor and is all you need on the chicken to make it mouth watering.

    It will look like you have spent hours on it because of how good it looks and taste, but the recipe is simple and quick.

    My mom has been making these mashed potatoes since I can remember. Sometimes I have to stop her and ask her process because she never uses a recipe.

    I wish we could all have that perfect sense to know what ingredient to add to make something perfect because I am convinced that my mother does, but I finally got her to slow it down so I could share this awesome recipe with all of you.

    Potatoes can be tricky at times and I know I have had my fair share of struggles, but here are a few tips to get them just perfect.

    • Keep the skin on and don’t chop the potatoes too thick – the should be about 1/2 in squares.
    • Boil them until they are fork tender (about 15-20 minutes), but you don’t want to overcook them
    • After drained, let them cool for about 5 minutes before blending

    I always pair it with a vegetable such as asparagus, broccoli, or corn to get some more food groups.

    Rosemary Chicken

    Mom's Mashed Potatoes

    • For: 6
    • Preparation: 15 min
    • Cooking: 25 min
    • Ready in: 40 min

    Instructions

    1. Scrub the potatoes before cutting then cut into 1/2 in squares.
    2. Fill a large pot full of water and bring it to a boil. Make sure there is a good inch or more of water above the potatoes.
    3. Cook until fork tender. (about 15-20 min).
    4. Cook in a large pan on medium heat. Drizzle with olive oil
    5. Season one side of the chicken with salt, pepper, and the rosemary garlic seasoning. Place the seasoned side face down in the pan. Then season the other side.
    6. Cook the chicken for about 5-7 minutes on each side until it reaches your perfect crisp.
    7. When the potatoes are fork tender, drain the water and return them to the pot. Add butter and leave them to cool for about 5 minutes.
    8. Start to blend the potatoes (I use a electric hand mixer) and add in the sour cream and half n half. Add a little more until it reaches your desired creaminess.
    9. Add garlic, chives, and bacon bits (microwave before adding). This is also when you could add any other extras to make it just the way you want.
